Aged Garlic

This traditional Chinese medicinal food can be eaten raw, used for cooking and/or for healing. You can use it after aging it a few weeks, months or years. Traditionally, Chinese made it the 8th day of the last month of the lunar year, which is usually January, so it was ready for use as a healing food at the start of spring, when people suffer more airborne ailments.

Ingredients

  • fresh garlic
  • raw apple cider vinegar (or any other type of raw vinegar)

Instructions

  1. Put peeled garlic in a glass jar
  2. Add enough raw apple cider vinegar to fully submerge all of the garlic.
  3. Age for several weeks / months / years. If it turns green in color, it is still good.
